Crunchy Pumpkin Salad~
*1small kuri pumpkin – cut in chunks & tossed in food processor. I lightly pulse until chopped.
1 cup whole cranberries – I keep fresh cranberries in freezer then take out when ready to throw in food processor.
* 1 celery stalk cut in small chunks (my grey loves celery so I add it to my recipe)
* pomegranate seeds (I added half of a pomegranate)
* 1/2 cup cooked red quinoa
* 1/2 cup chopped Kale
* sprinkled chopped walnuts in individual bowls
