· 2 cups whole wheat flour
· 1/3 cup honey
· 1 teaspoon baking powder
· 1 teaspoon baking soda
· 1 teaspoon cinnamon
· 3/4 cup chopped bananas
· 1/2 cup walnuts, finely chopped
· 2 eggs with shell washed well
· 1/2 cup virgin coconut oil
I also throw in some ground flaxseed and chia seed.
Mix the dry ingredients in a bowl. Add the eggs, honey and oil to the dry ingredients. Spoon into greased muffin cups or paper muffin cups. Bake for 20 to 25 minutes in a 375 degree oven, or until a toothpick inserted in the center comes out clean.
